Lutein, and its complementary carotenoid, Zeaxanthin, are two important retinal carotenoids for eye health. Lutein helps to maintain sharp, focusedvision and healthy eyesight. It also safeguards the macula from free radical damage and UV light rays. Lutein is a fat-soluble pigment called a carotenoid found in fruits and vegetables that is a potent antioxidant especially recommended for eye health. Lutein is the primary carotenoid present in the retinal center, the oval disc at the back of the eye called the macula. Degeneration of the macula is the leading cause of blindness in older Americans. Studies show more than a 50% decreased risk of macular degeneration with regular lutein use. Cataracts also appear to be forstalled by regular lutein use. Lutein promotes long-term eye health in two ways: 1) It acts as a light filter, protecting the eyes from some of the damaging effects of the sun. 2) As an antioxidant, lutein protects the eyes from the damaging effects of aging. 91% of eye doctors say they believe lutein plays an important role in promoting eye health, according to a recent study commissioned by Kemin Foods. And 58 percent of the eye doctors surveyed believe that lutein is the nutrient that best supports long-term eye health. The study surveyed 150 ophthalmologists and 150 optometrists in the United States. Fat-containing foods improve the absorption of supplemental lutein. |

Also called Cilantro. Native to the Mediterranean and Middle East regions, the herb is cultivated in Europe, Morocco, and the United States. Coriander’s delicate young leaves are widely used to flavour salads, sausages, curries, pastries, liqueurs, and confectionery. Records of the use of Coriander date to 5000 BC. The Romans used the 'seeds,' actually the fruit, to flavor bread. Coriander seed is a traditional spice basic to innumerable recipes. Coriander is elemental to curry powder,Indian masalas, Ethiopian berebere, and much Latin American cuisine. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Coriander seed for 'Dyspeptic complaints, loss of appetite.' 'Average daily dosage: 3 g of drug; equivalent preparations. Mode of Administration: Crushed and powdered drug, as well as other galenical preparations for internal uses. Powder, dry extracts and other galenical preparations for internal and external use.' Grieve's classic 'A Modern Herbal': 'Stimulant, aromatic and carminative. The powdered fruit, fluid extract and oil are chiefly used medicinally as flavouring to disguise the taste of active purgatives and correct their griping tendencies. It is an ingredient of the following compound preparations of the Pharmacopceia: confection, syrup and tincture of senna, and tincture and syrup of Rhubarb, and enters also into compounds with angelica gentian, jalap, quassia and lavender. As a corrigent to senna, it is considered superior to other aromatics.' 'If used too freely the seeds become narcotic.' 'Coriander water was formerly much esteemed as a carminative for windy colic.' King's 1898 Dispensatory: 'Coriander is a stimulant and carminative, and is employed in medicine as an adjuvant or corrigent.' |

The major Black Tea types, from the traditional black tea evergeen (Camellia sinensis), classified according to processing method, include: fermented, or black, tea, producing an amber-coloured, full-flavoured beverage withoutbitterness; semi-fermented, or oolong, producing a slightly bitter, light brownish-green liquid; and unfermented, or green, tea, resulting in a mild, slightly bitter, pale greenish-yellow beverage. Tea contains only four calories per cup when consumed without added ingredients but is a source of several B-complex vitamins, including B2 and nicotinic acid. Caffeine is responsible for tea's stimulating effect. Flavour is produced by volatile oils, and astringency and colour by tannin. Teas are classified according to region of origin, as in China, Ceylon, Japanese, Indonesian, and African tea, or by smaller district, as in Darjeeling, Assam, and Nilgris from India, Uva and Dimbula from Sri Lanka, Keemun from Chi-men in China's Anhwei Province, and Enshu from Japan. Teas are also classified by the size of the processed leaf. Traditional operations result in larger leafy grades and smaller broken grades. The leafy grades are flowery pekoe (FP), orange pekoe (OP), pekoe (P), pekoe souchong (PS), and souchong (S).
