There are color-coded bands providing data on fruiting season, size, spore deposit, edibility, and color. Identification is made easier by the organization of mushrooms by shape, with major categories subdivided by such characteristics as gill arrangement or flesh type. This highly informative pocket guide contains 2,300 color photographs and illustrations of more than 500 species of mushrooms. A reader: 'Each type of mushroom or fungus has its own half page section. The sections have a large and vivid pictures of the species. Did I mention that the pictures are incredible? Usually sections have supporting pictures such as top views and gill views of the mushrooms. It also gives species information, season availability, and dimensions in centimeters of the cap and the stem. The discussion in the section gives written information on description, occurrence, andsimilar species.' A reader: 'Excellent! This is the best mushroom field guide I have ever seen. This book shows sharp photos of each mushroom, as well as photos in cross section and of the underside. Photos are not of the mushroom in its natural habitat, but are on a white background, so each photo is well focused and well lit. Also includes a tiny photo or drawing of the mushroom in its natural habitat. Comprehensive-includes mushrooms that don't appear in my other two books. Mushrooms listed both by scientific and by popular names. Extremely conservative in the 'shrooms that it classifies as edible. Book is designed for the beginner (''What is a Mushroom?'') as well as the advanced (spore chart). The quality of the book itself is very high; it is printed on excellent paper and stays open to a page when needed. This is Frontier's nitrogen-flushed double wall silverfoil pack. Some Frontier packs are double wall wax-lined paper. Tapioca is a refined starch obtained from the root of the cassava plant Manihot utilissima (synonym Manihot esculenta), which is also variously known as manioc and yuca, and, in the old herbals, mandioca. Cassava is native to South America, but is now extensively grown in tropical regions the world over and is among the top half dozen cash crops of the tropics. Mrs. Grieve covers the history of this originally South American food below. Cassava has a very high starch content at 24%, most of which is stored as food reserved in the root of the plant. Cassava starch has an interesting property of forming into a stringy mass once dissolved in water; so most tapioca is sold as small balls, or pearl tapioca. Pearl tapioca is manufactured by extracting the juice from cassava roots leaving just the pulp. This pulp is soaked in water, then kneaded to release as much starch as possible. The fibrous remains of the root are strained away and the resultant liquid is dropped onto a hotplate, where they dry, gelatinize and form into the familiar pearls. Tapioca is also sold in flour form, which is simply known as tapioca starch. Tapioca starch is used as a thickening agent, in much the same manner as cornflour (cornstarch), while tapioca pearls are generally used in sweet dishes. South-East Asia has become the spiritual home of pearl tapioca desserts, where a mouthwatering array of differently scented confections can be found. A tapioca drink originated in Taiwan in the 1980s. It is a sweet beverage served in a myriad of mostly fruit flavors -- honeydew, mango, kiwi, strawberry, lemon -- but what makes it so much fun are the large globules of tapioca in each glass. Tapioca drinks are known by many names: bubble tea, boba drink, pearl tea drink, boba iced tea, boba nai cha, zhen zhou nai cha, pearl milk tea, pearl iced tea, black pearl tea, tapioca ball drink, pearl shake or QQ (which means chewy in Chinese). Forget that bland white pudding - those are multi-colored chewy bubbles about ½ inch in diameter, lurking in the bottom of the glass. The drinks are served with short fat straws wide enough to accommodate the tapioca pearls, which slide up the straw and into your mouth. In consistency, the tapioca pearls are somewhere between Jell-O and gummy-bears. Their ability to absorb color and flavor makes them a versatile favorite. Try Chocolate Tapioca Parfait, Apple Tapioca Pudding, Strawberry Tapioca Milk Shakes - the delicious combinations are endless. Famous for its pungent, sweet flavor, licorice is essential in innumerable candy, confection, beverage and sauce recipes, and makes an estimable liqueur. Licorice is also a traditional herbal remedy. The sweet saponin glycyrrhizin occurs in the roots of Glycyrrhiza glabra, the original European source, and in Glycyrrhiza uralensis, Chinese licorice. Authorities treat the two as chemically and medicinally identical. As Grieve puts it, 'The Liquorice of medicine and commerce is derived from the sweet root of various species of Glycyrrhiza, a genus which contains about fourteen species, natives of warmer temperate countries in both the New and Old Worlds...' The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Licorice root (Glycyrrhiza glabra) 'For catarrhs of the upper respiratory tract and gastric/duodenal ulcers.' 'Side Effects: On prolonged use and with higher doses, mineralocorticoid effects may occur in the form of sodium and water retention and potassium loss, accompanied by hypertension, edema, and hypokalemia, and, in rare cases, myoglobinuria.' 'Average daily dosage: About 5 - 15 g of root, equivalent to 200 - 600 mg of glycyrrhizin; As Succus liquiritiae: 0.5 - 1 g for catarrhs of the upper respiratory tract, 1.5 - 3 g for gastric/duodenal ulcers; equivalent preparations.' 'Mode of Administration: Powdered root, finely cut root or dry extracts for infusions, decoctions, liquid or solid dosage forms for internal use (Succus liquiritiae). Duration of Administration: Not longer than 4 - 6 weeks without medical advice. There is no objection to using licorice root as a flavoring agent up to a maximum daily dosage equivalent to 100 mg glycyrrhizin.' 'Actions: According to controlled clinical studies, glycyrrhizic acid and the aglycone of glycyrrhizic acid accelerate the healing of gastric ulcers. Secretolytic and expectorant effects have been confirmed in tests on rabbits. In the isolated rabbit ileum, an antispasmodic action has been observed at concentrations of 1:2500 - 1:5000.' Although the Commission E lists severe liver disease as a contraindication, less severe liver disease can be helped by the use of licorice. Hepatoprotective licorice tea is widely used as a liver tonic in Japan. Licorice's triterpene glycyrrhizin has been shown to prevent liver injury from such agents as carbon tetrachloride, benzene hexachloride and PCB. Glycyrrhizin aids antibody production and inhibits the growth of several DNA and RNA viruses, irreversibly inactivating the Herpes simplex virus.
