Lysine, a versatile essential amino acid used by the body for various purposes, is not manufactured by the body, and so must be supplied by diet or supplements. Nutritional yeast, fish, legumes, dairy and meat are all good sources of lysine. Lysine has been shown to inhibit virus infections and is recommended for herpes simplex, canker and cold sores, proper nitrogen balance, enzymes, collagen and tissue repair, after surgery and sports injuries. It is also an osteoporosis preventative. Lysine has been shown to interfere with the replication of herpes viruses and is therefore often prescribed by doctors for cold sores or genital herpes. Doctors often suggest that people with recurrent herpes simplex infections take1,000–3,000 mg of lysine per day. Lysine supplementation has been shown to increase the absorption of calcium and may reduce its excretion. Many experts feel that lysine can be helpful in the prevention and treatment of osteoporosis. Alan R. Gaby M.D. (''Preventing and Reversing Osteoporosis''): ''Exposure of lysine to temperatures of 250C for one hour also caused significant losses of lysine. Heating proteins even at moderate temperatures in the presence of sugars such as lactose, glucose, or sucrose can also destroy significant amounts of lysine. Thus, in the baking of pies, cookies, breads, and other grain products, where flour and sugar are heated together, substantial amounts of lysine may be lost.... it is possible that prolonged, subtle lysine deficiency caused by harsh food processing techniques could have an adverse effect on bones.'' ''Lysine hydroxylation is a critical feature of the appropriate cross-linking of collagen, which allows for the mineralization of bone tissue.''
