They are also almost always ''shade grown''—interspersed with other plants—to preserve vanishing wildlife habitat and discourage erosion. Coffee FAQ's: Coffee Grinding and Storage Q. Is it better to keep coffee in bean form and grind it before consumption, or is it better to buy coffee in the ground form and keep it in a sealed container? A. Buying whole bean coffee and grinding it just before using it will keep it fresh longer than ground coffee because you are exposing less of the surface of the bean to the elements. You should store both whole bean and ground coffee in an airtight container. Q. What are the best ways to grind coffee beans? A. There are many excellent types of grinders on the market ranging from manual to electric. One of the least expensive and most common is the electric blade grinder. Measure beans into the top, put the cover on and grind by time; 10 to15 seconds for coarse or perc, 15 to 20 for drip, 20 to 25 for autodrip, and 25 to 30 or more for fine or espresso grind. Blade grinders do have some drawbacks, specifically the grind is not as consistent, and the blade tends to heat or ''cook'' the beans a bit. Next is the electric burr type grinder. Dial in the grind size, measure beans intoa hopper and turn the grinder on. Two scribed discs literally crush the beans in a manner similar to the way wheat is ground in a flour mill. Ruby Mist is a flavorful combination of hibiscus from China, peppermint and orange peel from the U.S., lemongrass from Thailand, cinnamon from Sri Lanka, and rosehips from Chile. It is now enriched with zinc and echinacea, widely used as natural remedies for colds and flu. This tea has a beautiful ruby red color with a flavor that is tart with a hint of mint and cinnamon. One of the key ingredients of Ruby Mist, Chinese hibiscus, is tart and slightly lemony in flavor. Hibiscus is an evergreen plant with leaves similar to those of a maple tree. It grows to 2 to 6 feet and thrives kept moist in loose loamy soil with full sun. Its large flowers are usually red but may be orange to purplish-red and kidney shaped. The flowers last only a day, with new buds every day during harvest. Stash sources the finest whole hibiscus flowers from China and cuts them just before blending to ensure the tea blend is as flavorful as possible. Stash Peppermint is exclusively from top quality Oregon grown peppermint, considered the world's finest. Oregon's deep rich soil, moist cool winters, and dry sunny summers provide mint growers with the natural tools to produce this fine peppermint. This beautiful plant is found in India, tropical Asia, Africa, South America, Australia, and in the states of Florida and California in the U.S. Lemongrass lends a wonderful flavor to Asian cooking, especially Thai, Malay and Indonesian dishes. The essential oil in lemongrass, citral, gives lemongrass its distinctive citrus flavor. In fact, citral is often used as a substitute for lemon oil. Roses have been prized since the dawn of history and are known as the queen of flowers. After the velvety petals have fallen away the small, round, red fruit or ''hip'' is revealed. In herbal healing the rosehip (also called the hipberry) is prized for its vitamin C content, one of the best natural sources for vitamin C. In fact, ounce for ounce, rosehips are higher in vitamin C than oranges . Stash sources its orange peel from the best California Valencia oranges. Shiitake is a very popular edible mushroom that has been cultivated in Asia for centuries. It is a dense, chewy and meaty flavored mushroom that is good fried or grilled. Shiitake reportedly has wide-ranging health promoting and immunity stimulating properties against cancer, viral infection and high cholesterol. Fruiting formula by volume: 100 parts hard wood sawdust/small woodchips 10 parts bran 1 part gypsum (calcium sulfate) Water until moist and well soaked through. Drain or squeeze out excess water. The substrate should be damp but not wet. Pack into autoclavable bags and sterilized from 1-4 hours at 15 psi depending on the volume of the substrate. Larger volumes need a longer sterilization time to heat the core enough for complete sterilization. Depending on the type of bag and method of inoculation, the bags can be sealed before or after sterilization. Colonization is slow and may take as long as 1-2 months. Fruiting requires removing or puncturing the bag and providing a cool, well ventilated and humidified environment with indirect light. Hand misting daily and covering the bagless sawdust block loosely with a light plastic grocery bag (to maintain humidity) gives acceptable results on the kitchen counter.
