This is Starwest's nitrogen-flushed double wall silverfoil pack. Mustard seed is, obviously, the basis of your own homemade gourmet mustard. It also an invaluable addition to many sauces, stews, chutneys, breads and casseroles. Mustard is usually made with crushed or ground mustard seeds, vinegar, and wine. Honey or sugar are often added for sweetness, herbs and spices to taste. Tarragon is a frequent addition to mustard recipes, as is turmeric, which gives a bright yellow color. The pungency of white mustard (Sinapis alba) is stable, and does not diminish over time, whereas the pungency of black musatard (Sinapis nigra), although initially stronger than that of white mustard, diminishes upon long standing due to hydrolysis. Black mustard seeds, therefore, are used for strong and spicy mustards, and are understood to have a shorter shelf-life than mustard made from white seeds. Lemon and Mustard Seed Chutney http://homecooking.about.com/library/archive/blcon40.htm: Ingredients 4 medium onions, sliced 5 big lemons, seeded and chopped up 1 ounce salt 1 pint apple cider vinegar 1 ounce mustard seeds ¼ pound seedless raisins 1 scant teaspoon ground allspice 1 pound sugar Dash mace 1 or 2 cracked black peppercorns Pinch of cracked coriander (optional) Sprinkle salt over the onions and lemons and leave for 12 hours. Add remaining ingredients, bring to boil, then simmer on very low fire for about 45 minutes. Put into sterilized jars and seal when cold. Serve with leftover beef or mutton or ham, or as a sidedish to anything curried. Rhubarb Chutney http://homecooking.about.com/library/archive/blcon38.htm: Ingredients 1 pound rhubarb 2 teaspoons coarsely grated fresh ginger 2 garlic cloves 1 or 2 jalapeno peppers, seeds and veins removed 1 teaspoon paprika 1 tablespoon black mustard seeds ¼ cup dried currants 1 cup light brown sugar 1-½ cups white wine vinegar Wash the rhubarb and slice it into pieces ¼ inch thick. If the stalks are wide, first cut them into halves or thirds lengthwise. Finely chop the grated ginger with the garlic and jalapenos. Place all the ingredients in a non-corroding pan, bring to a boil, lower the heat, and simmer until the rhubarb is broken down and is the texture of a jam, about 30 minutes. Stored refrigerated in a glass jar, this chutney will keep several months. Hot, tart and sweet, this is a condiment to serve with curries or with crackers and cream cheese. Mustard's stimulating, diaphoretic action can be utilized in the way that cayenne and ginger are. For feverishness, colds, and flu, mustard may be taken as a tea or ground and sprinkled into a bath. Chinese Ren Shen, 'root of heaven,' Panax ginseng, Asian ginseng, is native to Manchuria and Korea and is cultivated in China, Korea and Japan. The ginseng plant requires 5-7 years to mature from seed. Ginseng has a sweetly aromatic flavour. Its root has long been regarded by the Chinese as a panacea for illness, though it was usually used by them in a prophylactic (preventive) rather than a curative manner. Many Native American tribes used American ginseng, Panax quinquefolia. Medicinal uses ranged from digestive disorders to sexual problems. The Chinese began to use American ginseng afterit was imported during the 1700s. The traditional applications in China are somewhat different from those for Panax ginseng (Asian ginseng), American ginseng being considered a better stomachic. The type and ratio of ginsenosides are somewhat different in American and Asian ginseng, but not radically different. Pharmacologically, ginseng is nonspecific in its effects and is capable of a normalizing action irrespective of the pathological situation. Ginseng's ginsenosides are believed to increase energy, counter the effects of stress, and enhance intellectual and physical performance. Thirteen ginsenosides have been identified in Asian ginseng. Ginsenosides Rgl and Rbl have received the most attention. Other constituents include the panaxans, which help lower blood sugar, and the polysaccharides (complex sugar molecules), which support immune function. Numerous double-blind studies have confirmed Chinese tradition, objectively demonstrating Asian ginseng's ability to lower blood sugar, reduce fatigue and stress, and support the normal function of the hypothalamic-pituitary-adrenal axis, the hormonal stress system of the body. Ginseng's support of the brain's production of adrenocorticotropic hormone (ACTH) appears to improve mental performance, learning, and memory and sensory awareness, exactly as Chinese tradition has always maintained. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs, reflecting the opinion of modern scientific herbalism, recommends Ginseng root [Panax ginseng] 'As tonic for invigoration and fortification in times of fatigue and debility, for declining capacity for work and concentration, also during convalescence.' 'Daily dosage: 1 - 2 g of root; equivalent preparations. Mode of Administration: Cut root for teas, powder and galenical preparations for internal use. Duration of Administration: Generally up to 3 months. A repeated course is feasible.' Bilberries, a principal food of the grouse, are a staple of sweet European haute cuisine for sauces, glazes, mousses, syrups, chutneys, jams, jellies, cobblers, pies, cakes and tarts. Here's a couple of simple Bilberry recipes: Bilberry Tart ½ lb pastry 2.2 lb bilberries 2 spoons sugar Line a pie-dish with the pastry. Fill with fruit. Bake in the oven and dust with sugar when cooked Bilberry Jam Soak and soften dried fruit, drain, crush in pan with wooden spoon, add juice of 1 lemon to each 2 lbs bilberries and simmer until soft. Add warmed sugar, 1½ lbs to each 2 lbs fruit. Boil to setting point. Pot and cover. Medicinally, bilberry is used as an infusion, decoction, extract and tincture. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Bilberry for 'Nonspecific, acute diarrhea. Local therapy of mild inflammation of the mucous membranes of mouth and throat.' 'Dosage: Internal: Daily dosage 20 - 60 g. External: 10 percent decoction; equivalent preparations. Mode of Administration: Dried drug for infusions, as well as other galenical preparations for internal use and local application. Duration of Administration: If diarrhea persists for more than 3 - 4 days, consult a physician. Action: Astringent.' The dried berries and leaves have been recommended for scurvy, urinary tract infections, kidney stones and diarrhea. Modern research on bilberry was kick-started by British World War II pilots, who noticed that their night vision improved when they ate bilberry jam prior to night bombing raids. The plant appears to assist the retina, the light-sensitive part of the eye, in adjusting quickly to both dark and light. Research has shown that this is probably a result of the plant's anthocyanosides, which have antioxidant properties and appear to boost oxygen and blood delivery to the eye. In one study of 50 patients with age-related cataracts, it was found that taking bilberry extract along with vitamin E supplements stopped the progression of cataracts in nearly all of the participants. The study did not, however, isolate the effects of the vitamin from the bilberry. But bilberry has also shown promise in the treatment of other eye disorders, such as diabetic retinopathy and pigmentary retinitis, so bilberries and eyes seem to go together. Anthocyanosides also appear to strengthen collagen, the protein that provides support to healthy connective tissue. Anthocyanosides help larger blood vessels maintain good circulation throughout the body. A 1988, single-blind, placebo-controlled study of this herb included 60 patients with poor circulation (venous insufficiency).
