Two common ground varieties are 30M & 90M Heat Units, (30,000 & 90,000 respectively). The 30M pepper is comparable to the canned 'Red Pepper' that you find in at the Supermarket. Dulse is also eaten with fish and butter, boiled with milk and rye flour, or as a relish. The gelatinous substance contained in dulse is a thickening agent and imparts a reddish colour to the food with which it is mixed. In Scotland, Ireland and Iceland it is known as Söl. It is blended into milk drinks, lemon flavoured oils, jellies or just sugar coated, like breakfast cereal. Flour is also made from it. Throughout northernNorth America, Dulse is appreciated as a beer appetizer.
