What would eggnog be without the nutmeg? It is mildly hallucinogenic, which may also contribute to the Christmas cheer. Nutmeg is also used in perfumes and ointments. The brown, wrinkled, apricot-like fruit contains a kernel which is covered by a bright red membrane. The membrane (arillus) provides the spice mace, and the kernel the spice nutmeg. Traditional Middle Eastern, Indian and North African spice mixtures, used for everything from meats to pastries, such as baharat, garam masala and ras el hanout, often contain nutmeg. In Holland, nutmeg is used for just about everything, literally from soup to nuts, and everything in between. French quatre épices ('four spices') contains nutmeg, ginger, white pepper and cloves. Allspice and cinnamon are sometimes added. Four spice mix finds its way into stews, ragouts, sausages and pastries. Jamaica's great jerk grilled meat seasoning often contains nutmeg. In small quantities, nutmeg acts on the stomach to improve appetite and digestion. Nutmeg oil is sometimes used to dispel flatulence. It helps prevent gas and fermentation in the intestinal tract. Grieve's classic 'A Modern Herbal': 'Both nutmeg and mace are used for flatulence and to correct the nausea arising from other drugs, also to allay nausea and vomiting. Nutmeg is an agreeable addition to drinks for convalescents.' King's 1898 Dispensatory: 'Both nutmeg and mace possess aromatic stimulating properties, and are occasionally used to remove flatulency, correct the nausea arising from other drugs, and to allay nausea and vomiting. It may be used in gastrodynia and atonic diarrhoea. The nutmeg forms a very agreeable addition to various drinks for convalescents, as well as to some articles of diet; it is generally grated over them, or mixed with them.' 'Dose of nutmeg or mace, from 5 to 20 grains. Larger doses possess decided narcotic qualities, and in doses of 2 or 3 drachms, dangerous symptoms have been produced.' Eclectic Materia Medica, 1922 (Felter): 'An aromatic stimulant and carminative in small doses; larger doses produce nervous sedation and are soporific... Therapy: External. An ointment containing the finely powdered nut, or the volatile oil sometimes proves obtundant to painful piles. Grated upon a larded cloth and applied warm we have found it to give prompt and grateful relief in soreness of the chest attending anacute cold or the beginning of acute respiratory inflammation. It may also be used as a spice poultice to the abdomen in painful bowel affections from cold. A liniment of oil of nutmeg (1) and olive oil (3) is regarded by some as an efficient parasiticide for mild types of ringworm. This is Starwest's nitrogen-flushed double wall silverfoil pack. Used as an infusion, decoction, extract and tincture. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends Valerian root for 'Restlessness, sleeping disorders based on nervous conditions.' 'Dosage: Unless otherwise prescribed: Infusions:2 - 3 g of drug per cup, once to several times per day. Tincture: ½ - 1 teaspoon (1 - 3 ml), once to several times per day. Extracts: Amount equivalent to 2 - 3 g of drug, once to several times per day. External Use: 100 g for one full bath; equivalent preparations. Mode of Administration: Internal: As expressed juice from fresh plants, tincture, extracts, and other galenical preparations. External: As a bath additive. Actions: Sedative: Sleep-promoting' The World Health Organization also recommends Valerian as a mild sedative, pain-reliever and sleep-promoting agent. Valerian root contains many constituents, including essential oils that appear to contribute to the herb's sedating qualities. Contemporary clinical studies have demonstrated that Valerian significantly improves sleep quality without morning grogginess. Regular, moderate use produces neither dependency nor health risks. Valerian was included in many editions of the United States Dispensatory (Merck) since 1849, which reported the herb's effect on the nervous system and its ability to produce drowsiness and sleep. Various valerian species are still included in the pharmacopoeiae of many nations including Belgium, France, Germany, Italy, Switzerland and the United Kingdom. The United States Pharmacopeial Convention has accepted a valerian monograph for inclusion in the National Formulary (Pharmacopeial Forum, 1998). It is widely used as a sedative and antispasmodic in the United States. Valerian preparations appear to be candidates for safe and effective nonaddictive alternatives to conventional sleep medications. Valerian roots contain several compounds with demonstrable pharmacological activity. Valerian analyses have primarily focused on the essential oil, valerenic acid and valepotriates. In the United States, the essential oil and valerenic acid are commonly used as marker compounds for qualitative and quantitative analysis of valerian root and valerian products. Grieve's classic 'A Modern Herbal': 'Valerian is a powerful nervine, stimulant, carminative and antispasmodic.' Conifer Coral Plug Spawn: 100 dowels (Hericium abietis): F

Hericium abietis grows exclusively on conifers and is very similar in appearance to Hericium erinaceus. Native to western North America, the Conifer Coral Mushroom has a delicate and pleasant flavor. Stumps or partially buried, horizontally-oriented logs are recommended for inoculation. Fungi Perfecti's Plug Spawn consists of mushroom mycelium growing on small, spiral-grooved birch dowels. By using the dowels to inoculate cut hardwood logs or stumps, mushroom mycelium can be encouraged to grow throughout or colonize the wood. Once the wood is fully colonized (typically 9-12 months) mushrooms will spring forth from cracks or channels in the wood. Fungi Perfecti's Plug Spawn comes with a 10-page instruction booklet. Generally, the best time of year to inoculate logs and stumps is in the Spring, after your last hard frost. However, you can inoculate your logs any time up to 2-3 weeks before consistently (i.e. 'round the clock) freezing temperatures set in for the Winter. The idea isto allow the mushroom mycelium growing on the Plug Spawn time to establish itself in its new home before it goes into dormancy over the Winter. Logs should be cut to lengths of 3-4 feet, and are best if they do not exceed 14 inches in diameter. Use a 5/16'' drill bit in a high-speed drill to drill 2-inch holes no more than 4 inches apart, evenly spaced along the logs. Stumps should be inoculated along the circumference of their face, in the border between the bark and the heartwood. Insert 1 plug per hole and whack it in with a hammer. A 3-4 foot log can take 50 or more plugs, while stumps usually hold 30-50 plugs Holes can be sealed with cheese wax or beeswax to protect the mycelium while it is growing; although this step can be helpful, it is not absolutely necessary. Our Plug Spawn prefers to grow on hardwoods, with the exception of the Conifer Coral Mushroom, which grows on conifers, and the Phoenix Oyster, which grows well on firs. Most species can be grown on either logs or stumps. Non-aromatic hardwoods such as oak, poplar (cottonwood), elm, maple and similar woods are very good candidates for log cultivation. Alder is a good wood for the cultivation of Oyster and Shiitake mushrooms, but must be kept above ground because it will decompose quickly in contact with the soil. (We do not recommend using aromatic woods such as cedar or eucalyptus.) Thick-barked woods are preferable over ''paper-bark'' woods such as birch, and any log that is shedding it's bark should not be used. Logs should be cut one to three months in advance of plugging. Cutting your logs in the late Winter or early Spring helps to insure that they have a high sugar content, although this is not strictly necessary. Freshly-cut logs should not be immediately inoculated; trees naturally produce anti-fungal compounds, which degrade in two to three weeks from cutting. Aged deadwood is also not recommended for plugging, as it has a poor nutrient base for supporting mushroom growth. Logs or stumps wit
