Made with certified organic vanilla and certified organic grain alcohol. Whole vanilla beans, rather than extract, will impart the purest, most intense vanilla flavor to your recipes. The best-quality, Vanilla planifolia, comes from Mexico, Madagascar, and Indonesia. Vanilla planifolia is native to Central America, where it is still grown commercially. The closely related Vanilla tahitensis,Tahiti vanilla, is native to Oceania. The Aztecs called Vanilla 'tlilxochitl,' 'black flower.' It flavored their 'cacao water,' 'cacahuatl' in the Aztec tongue Náhuatl, 'chocol haa' in the Mayan tongue. (The Aztecs were to the Mayans as the Dorians to the Mycenaeans, if one may make so bold.) Cacahuatl was made from vanilla, cocoa beans, honey, hot water and other spices, such as annatto. The Aztecs considered vanilla to be an aphrodisiac. Vanilla flavours many chocolate and confectionery items and several liqueurs such as Crème de Cacao and Galliano. V. pompona, also called Guadeloupe vanilla or Antilles vanilla from the West Indies, and V. tahitiensis, from Tahiti, are sometimes used as V. planifolia replacements. They are 'inferior' only in the sense that they are different. The aroma and flavor are slightly different, but taste is personal, and the alternative species are preferred by some. Fresh vanilla pods are tasteless - the vanillin is bound as a glycoside and must be set free by enzymatic reaction, normally induced by a sequence of blanching or steaming operations. It is this, and the equally labor-intensive need for manual pollination outside its originary South American home, that makes vanilla so expensive. Store vanilla beans in an airtight container in a cool, dark space along with your other spices. The deepest vanilla flavor is found in the seeds, the dark, sticky pulp inside the bean. Once you've extracted the seeds, there are a few ways to use them and the scraped pod: Infuse a liquid with the bean and seeds. Drop the seeds and the scraped pod into warm liquid, such as scalded milk or cream, and leave them to infuse for at least 30 minutes and up to an hour. Strain the pod from the liquid (the tiny specks of vanilla seeds will remain). Use the flavored liquid for your recipe. Add the scraped seeds directly to a batter. For example, add the seeds to the butter and sugar before creaming when making cookies. Add a small piece of a split bean (no need to scrape first) to a savory stew at the beginning of cooking. This is especially good in rich shellfish dishes or highly spiced meat dishes. A 2-inch piece of vanilla bean (halved and scraped) equals about 1 teaspoon of pure vanilla extract. The best-studied and most popular herb in Europe, ginkgo is prescribed more than 5 million times per year in Germany alone. Numerous well-controlled studies have shown it can improve blood flow to the brain and alleviate vertigo and ringing in the ears. And the evidence of its safety is solid. In China, the curative powers of Ginkgo have been known for thousands of years. It has been used as an aid in the treatment of many of the problems typically associated with aging, such as poor blood circulation, mental confusion and memory loss. Ginkgo stimulates cerebral circulation and oxygenation of cells, thereby improving mental clarity and alertness. Ginkgo has further been found to be effective in reducing blood cell clumping which medical science has discovered can bring on congestive heart disease and strokes. Medicinal use of Ginkgo leaf tea is ancient in Chinese herbal medicine. It helps clear the mind and improve the power of concentration. Modern clinical trials have demonstrated the usefulness of ginkgo in the treatment of Alzheimer’s disease, age-related cognitive decline and depression. Ginkgo's flavone glycosides and terpene lactones do indeed increase circulation to the brain and other parts of the body as well as exerting a protective action on nerve cells. The unique terpene lactone components found in ginkgo are known as ginkgolides and bilobalide. Ginkgolides apparently improve circulation and inhibit platelet-activating factor. Bilobalide protects the cells of the nervous system. Recent animal studies indicate thatbilobalide may help regenerate damaged nerve cells. One double blind study found that ginkgo could help people with macular degeneration, an oxidation-related disorder causing decreased or lost vision. Ginkgo’s antioxidant activity in the brain and central nervous system may help prevent age-related declines in brain function. The brain and central nervous system are particularly susceptible to free radical attack. Free radical damage, that is, oxidation damage, in the brain is widely accepted as being a contributing factor in many disorders associated with aging, including Alzheimer’s disease. The 1997 Commission E on Phytotherapy and Herbal Substances of the German Federal Institute for Drugs recommends a dry extract from the dried leaf of Ginkgo biloba for '(a) symptomatic treatment of disturbed performance in organic brain syndrome within the regimen of a therapeutic concept in cases of demential syndromes with the following principal symptoms: Memory deficits, disturbances in concentration, depressive emotional condition, dizziness, tinnitus, and headache.' From ancient Greece to the present, nettle has been documented for its use in treating coughs, tuberculosis, asthma, arthritis, intestinal complaints and skin problems. Currently it is thought that polysaccharides (complex sugars) and lectins (large protein-sugar molecules) are probably the active constituents. The leaf has been shown to be anti-inflammatory by preventing the body from making inflammatory chemicals known as prostaglandins. Nettle’s root affects hormones and proteins that carrysex hormones (such as testosterone or estrogen) in the human body; this may explain why it helps benign prostatic hyperplasia. This has been confirmed using extracts of the roots in double blind studies. A preliminary study reported that capsules made from nettle leaves had an antiallergy action in people. Grieve's classic 'A Modern Herbal': 'Nettle is anti-asthmatic: the juice of the roots or leaves, mixed with honey or sugar, will relieve bronchial and asthmatic troubles and the dried leaves, burnt and inhaled, will have the same effect.' 'The seeds have also been used in consumption, the infusion of herb or seeds being taken in wineglassful doses. The seeds and flowers used to be given in wine as a remedy for ague. The powdered seeds have been considered a cure for goitre and efficacious in reducing excessive corpulency. Nettle is one of the best antiscorbutics. An infusion known as Nettle Tea is a common spring medicine in rural districts, and has long been used as a blood purifier.' King's 1898 Dispensatory: 'Common nettle is astringent, tonic, and diuretic. A decoction is valuable in diarrhoea and dysentery, with profuse discharges, and in hemorrhoids, various hemorrhages, and scorbutic affections, and has been recommended in febrile affections, gravel, and other nephritic complaints.' 'A strong syrup made of the root, combined with suitable quantities of wild-cherry bark and blackberry root, forms an excellent remedy for all summer complaints of children, and bowel affections of adults. In cholera infantum and other summer disorders of children, with profuse watery or mucous discharges, the following treatment gives excellent results: Rx Specific urtica, ss; water, iii. Mix. Dose, a teaspoonful, every 1 or 2 hours. It is especially applicable in chronic diseases of the colon, with increased secretion of mucus.'
