Brewer's yeast, which is often called nutritional yeast, was originally a by-product of the brewing of beer. Brewer's yeast is nutritionally the same as Nutritional yeast, but, as a by-product of beer-brewing, it has a characteristic bitter hops flavor. Nutritional yeast, the same yeast, is grown on mineral enriched molasses instead of hops, and more often used as a food supplement, because it tastes better. At the end of the Nutritional yeast growth period, the culture is pasteurized to kill the yeast. This retains the nutrients, but deactivates the live yeast (i.e. baking yeast) as a food supplement because the live yeast continues to grow in the intestine and actually uses up the vitamin B in the body instead of replenishing the supply. Yeast are single-celled microorganisms that reproduce by budding. They are biologically classified as fungi and are responsible for converting fermentable sugars into alcohol and other byproducts. There are literally hundreds of varieties and strains of yeast. In the past, there were two types of beer yeast: ale yeast (the 'top-fermenting' type, Saccharomyces cerevisiae) and lager yeast (the 'bottom-fermenting' type,Saccharomyces uvarum). Today, as a result of recent reclassification of Saccharomyces species, both ale and lager yeast strains are considered to be members of S. cerevisiae. Nutritional and Brewer's yeast contains high levels of many important nutrients, including all of the B vitamins (except for B12), 16 out of 20 amino acids, and 14 different minerals. The amino acids (proteins) in yeast help the body repair tissue and fight disease. Nutritional and Brewer's yeast has a very high protein content, with one tbsp providing 4.6 g, making it a rich source of protein for vegetarians. It is also high in phosphorus. Because yeast is such a rich source of B vitamins, it enhances the roles these vitamins play in the body. The B-complex vitamins help your body metabolize carbohydrates, fats, and proteins. They also support the nervous system and help maintain the muscles used for digestion. Brewer's yeast is also an important source of chromium. The U.S. FDA recommends 120 mcg of chromium daily, but 90% of Americans are deficient in this important mineral. Chromium has the ability to significantly lower blood cholesterol levels. Sulfites are used to give herbs the appearance of freshness. As with dried fruit. un-sulfured herbs look different than those that are adulterated with preservatives. Herb harvesters slice and process the herbs fresh, avoiding the need to rehydrate dried herbs later to process. This first step is crucial, as rehydration leads to decomposition and thus the need for preservatives. The herbs are then packed and the packages vacuum-packed, injected with nitrogen, and sealed. The nitrogen process combined with the lack of sulfur treatment inhibits the growth of anaerobic organisms, resulting in safer, higher quality herbs. After opening, store in a cool dry place. The facilities in Lanzhou and Guang Zhou, China, scientifically test each batch of herbs before, during and after the processing to make sure that all the active ingredients are present. Herbs are also tested to ensure that the formulas surpass all FDA guidelines regarding heavy metals. Those herbs exported to the U.S. are voluntarily submitted to the FDA for approval. Finally, batches are regularly sent out for quality control testing in third-party labs to double-ensure that Plum Flower products are 100% free of pharmaceuticals, preservatives and dyes. The Lanzhou and Guang Zhou factories are so clean, they are certified by the Australian Government’s Therapeutic Goods Administration (GMP). Anise is cultivated chiefly for its fruits, called aniseed, the flavor of which resembles licorice. Aniseed is widely used to flavor pastries; it is the characteristic ingredient of the popular German bread called Anisbrod. In the Mediterranean region and in Asia, aniseed is commonly used in meat and vegetable dishes. It makes a soothing herbal tea and has been used medicinally from prehistoric times. The essential oil content is about 2.5 percent, and its principal component is anethole. As Grieve puts it, Anise Seed tea is 'Carminative and pectoral. Anise enjoys considerable reputation as a medicine in coughs and pectoral affections. In hard, dry coughs where expectoration is difficult, it is of much value.' Stir. Microwave another 1 min., to finish toasting. Set aside to cool. Preheat oven to 350 degrees. Place anise seeds in a small bowl. Add 1 tablespoon Sambucca and heat in microwave oven on high for 10-15 seconds, or until steaming. Set aside. In a mixing bowl, combine butter and sugar until light and fluffy. Beat in eggs. Add anise seed mixed with the Sambucca and also the remaining 1 tablespoon of liqueur. Sift together the flour, baking powder, and salt. Add to the creamed mixture, mixing just until blended. Cut nuts in halves or thirds and fold in. Divide dough in half. On a non-stick, or a greased and floured sheet, pat the dough into two logs about ½ inch high, 1½ inches wide, and 14 inches long, spacing about 2 inches apart. Bake for 25 minutes, or until lightly browned. Transfer to a cutting board. With a serrated knife, slice at a 45 degree angle about ½ inch thick. Place the slices upright ½ inch apart on a baking sheet and return to the oven for 10 minutes longer to dry slightly. Let cool on a rack. Store in a tightly covered container. Makes about 3 ½ to 4 dozen.
